You cannot go wrong with a spicy grapefruit Margarita in Summer. It’s fresh, vibrant and has a zing to it.
Cocktails should celebrate the moments you are in, their taste reflecting or enhancing a mood – much like certain kinds of wine goes better with a particular dish and not another. Then it’s only natural that when summer arrives, we look for something more bright and colourful, and tend to leave dry, smoky or dark notes for the wintery months.
So here is a summery Margarita to celebrate the arrival of summer. Lush with the distinctive peachy colour and fresh bittersweet taste of pink grapefruits, and tingly with the jalapeño heat. Delisc!
SPICY GRAPEFRUIT MARGARITA
- 35 ml tequila
- 60 ml fresh pink grapefruit juice
- 20 ml Cointreau
- 15ml fresh lemon juice
- 5 ml simple syrup
- 2 jalapeño chillies
- 1 tsp sea salt flakes
- 1 tsp sweet paprika
- a wedge of pink grapefruit and/or jalapeño slices for garnish
Mix the salt flakes and sweet paprika in a small flat dish. Then wet the rim of a jam jar or a lowball glass in a bit of lime juice and dip it in the salty/spicy mix.
Being mindful of the rim, fill the glass with ice cubes, drop in a few thinly cut slices of jalapeños and pour in the tequila, grapefruit and lime juices, the Cointreau and simple syrup together. Stir lightly and garnish with a wedge of pink grapefruit slice.
A little note: If you can, infuse some tequila with thin slices of jalapeños well in advance and beforehand. Then filter it. If, however, you’re mixing on the spot, leave the chillies in the drink for added flavour.
