I’ve become a little obsessed with plums this summer. I like them so ripe they melt in your mouth, but also when they’re still hard and a little bid tart (sounds rude but isn’t, I swear!).
This is a really easy variation of the traditional mojito and it won’t take anything more than a few minutes to fashion. Just make sure you choose the right plums for you, as this will decide how sweet, or sour, the end taste will be.
Then bring out some summer cushions. Sip in the heat. Get a delicious brain freeze.
- 1 plum or pluot, peeled and quartered
- 60ml white rum
- 1 teaspoon of sugar
- ½ lime, cut in half
- a bunch of mint leaves (about a dozen medium size) plus an extra sprig for garnish
- crushed ice
- soda water to top up
At the bottom of an Old Fashioned glass (or fairly stout tumbler), squish the peeled plum, lime bits, mint leaves and sugar together using a muddler or pestle. Add the rum and stir everything gently. Then top up with crushed ice and top with soda water.
Garnish with a sprig of mint and a thin slice of plum.
