Somehow I fall in the category of people who don’t like a Gin & Tonic.

Despite its popularity, I find it a more often than not badly mixed drink. But Funnily enough, I rather like gin, especially homemade sloe, or good gin like Hendrick’s. And I absolutely love tonic water (it’s gratifying and refreshing, and it reminds me of a skiing trip in Cortina D’Ampezzo when I was six and felt like 13). But I find a G&T quite often a bit disappointing, especially if it’s made with cheap gin and cheap tonic, so I’ve been looking for a more… sophisticated alternative for a while.

This delicious mix has been suggested by my colleague Menna, lovely girl and great cocktail maker, who taught me that Hendrick’s goes hand in hand with cucumber, because it’s a cucumber-based gin.

  • 50ml Hendrick’s gin
  • 20ml elderflower cordial (if you have the time, make your own)
  • 4cm of peeled cucumber
  • A generous squeeze of lime juice
  • Ice cubes
  • Soda water
  • A long wedge of cucumber,  to garnish (optional)

Dice the cucumber and mash it with the ice cubes at the bottom of an Old Fashioned glass. Pour in the Hendrick’s and the elderflower cordial. Top the glass up with soda water and then add the lime juice, which you can adjust according to your taste. Garnish with a long cucumber wedge.
