Today teachers are letting out a communal sigh as parents everywhere brace for chaos – the summer holidays are here. Kids all over the UK have that awesome beginning-of-school-holidays feeling when six weeks felt like forever so this week’s Happy Hour cocktail is for the kids.

It’s healthy and hydrating and looks pretty cool if you add some coconut around the top. Get the kids involved in making the coconut rim and the pineapple skewer – that will kill 10 minutes – only six weeks to go!


1 part pineapple juice
1 part coconut water
1 part coconut milk
Parents add white rum accordingly (obvs)


Combine all three parts in a jug with ice and stir (or you could use a cocktail shaker if you have one and give it a good shake). Pour some honey onto a plate and dip the rim of the glass in it. On another plate sprinkle some desiccated coconut, then dip the glass in the coconut so it sticks to the rim before pouring the drink in.

For added fun thread some pineapple chunks onto a bamboo skewer for a swizzle stick. Enjoy next to a paddling pool.
