HAPPY HOUR – THE LADY MARMALADE

This tipple comes courtesy of my beloved local pub, The Rookery. Back in the days when I had a quiet, perfectly behaved baby who could sleep through anything, we’d head around the corner, take residence at our regular table in a quiet nook at the back of the pub, and I’d treat myself to a prosecco and marmalade cocktail while my little one snoozed away in his buggy for hours. Hey, mama needs the occasional drink!

Now I have a hyperactive beast of a toddler I can’t take anywhere, so for now, long Sunday lunches and prosecco cocktails are an at-home affair. I like to call this little number the Lady Marmalade…

Ingredients

LADY MARMALADE

Posh marmalade (if you can find it, use blood orange marmalade for bittersweet loveliness)
Prosecco

Ladyland Method

Allow two teaspoons of marmalade per person. Blitz it in a blender or whisk it in a bowl to loosen it up a little. Spoon the marmalade into a champagne flute and pour over your prosecco. Don’t expect the marmalade to dissolve – it looks and tastes better this way.
