
12 May HONEY, LEMON, GIN – THE PERFECT TONIC
In an uncharacteristic moment of foresight, I shot this cocktail months ago and now I’m staring at it longingly, wishing it to return. This gin cocktail is a simple take on a Bees Knees. It’s sharp, sweet and contains honey, lemon, ginger and gin. So it’s basically medicinal. The perfect tonic to end a week which has heavily featured the constant clicking of a six year old with a fidget spinner.
- Gin – I used Bombay Sapphire
- Lemon – juice and rind
- Honey
- Ginger
- Water
First make the honey lemon syrup. Warm one part honey and two parts water in a saucepan on a low heat, add a chunk of ginger. Warm it through then leave to cool.
In a cocktail shaker pour gin, the juice of a lemon and the honey ginger syrup. Give it a good old shake, then pour into a martini glass… or a mug, or drink it out of the shaker. I won’t judge.
