
14 Jul ONE POT PASTA HAS CHANGED MY LIFE!
Yeeees it’s a pretty bold statement BUT the one pot pasta has me so excited I just had to share! It’s pretty simple really, you put all your ingredients, including dry pasta, into a large cast iron type pot, add a little water and taaadaaa, about 15 minutes later you got yourself pasta and sauce combined and nearly zero washing up. In truth, it’s not going to win Masterchef and Jamie Oliver might possibly turn his nose up at it but the time saved on that Tuesday evening, and Wednesday (and Thursday!) is oh so worth it.
If you google it you’ll find plenty of inspiration. Personally I chuck everything but the kitchen sink into mine, all those lonely veggies looking a bit sad at the bottom of the fridge plus that little bit of feta cheese forgotten at the back.
So today in my one pot pasta I used:
1 green pepper – Yep, that one you got with your tri-colour pack and never know what to do with – finely chopped
2 sad courgettes, finely chopped too
1 handfull of spinach
350gr dry Penne pasta
1 tin of chopped tomatoes
2 lonely sausages, cut into small chunks. No skin please
Lots of garlic, sliced
Salt and pepper
Olive oil
Grated Parmesan and basil to garnish
As for the method, just throw everything in including the olive oil. Fill your empty tomato tin twice with water, add to the pot and cook the whole thing on a high heat, for about 15 mins or until your pasta is cooked and the water has evaporated.
And voilà, diner sorted… Massive score!
A few notes:
Try to choose pasta which cooks in about 11-13 minutes.
Use veggies that needs little cooking time and cut them small.
You might have to adjust the quantity of water depending on your ingredients.
